you got other pk3 files at ur demo folder, besides assets.pk3(Never delete this one!), to fix it, delete other ones, or download patched sof2mp.exe(We dont "support" mods but its ur own choice, or if ur just trying to play some new maps for fun or such)

"Opengl Error" - can't remember how the error really looks like, but once you get it, you know what I mean,
fix - drivers, make sure what card you got (start-run-dxdiag-display)
and then download drivers for it & also update ur directx
NVIDIA DRIVERS!
ATI DRIVERS!

Also make sure you have r_stereo set to 0.

"Soldier of Fortune II is already installed on this computer, uninstall it before proceeding with the setup" - error that looks like that while you are trying to install sof2 demo.
Caused by bad uninstall - i.e deleting sof by just "DELETE" button and then from recycle bin, but that doesnt delete the registry entrys!
Fix it with:

*new mirror(s);
Uninstall.rar(Download)

Run it once, and you should be OK.

don't have one yet, just installed the game

EDIT: I dl'ed a cfg from www.sof2-stop.net and placed it in my sof map. I checked r_stereo and it was set to 0. I still get this fucked up error.
